๐Ÿ“Mini Haul & Small Cheesecake Batch ๐Ÿ“

Hey lovelies! ⭐ I hope y'all are enjoying this week so far ๐Ÿ’– After last month's minor foot surgery, I was taken to my local discount department store as a treat to "just browse" and ended up taking home new ovenware and other supplies at a great sale price with additional discounts which was lovely! ๐Ÿฅณ๐ŸŽ‰ Nothing better than a fabulous deal!! ✌๐Ÿ˜Ž I'm slowly building my bakeware collection which is really exciting! And the cherry on top is that these items are Valentine's Day themed! ๐Ÿ’—
 Valentine's Day is one of my favorite holidays and one of the best things about it is the pink and red heart-shaped merchandise! It's cute and so much fun ๐Ÿ’˜
This week I baked a cheesecake with a strawberry jelly topping! ✨ I've already baked a cheesecake once before about three weeks ago for my papรก's birthday but it was only eighty-six percent successful. I know I can't master a dessert on the first try but it was still disappointing that my base was too hard. After reading the comments on a baking forum I realized that the brand of biscuits I used sealed my downfall so this time I'm definitely more prepared. I wanted to make this cheesecake more of a challenge by choosing to add a jelly top instead of a strawberry purรฉe with whipped cream like I did late time. And of course, me being me, I decided to do so after I had already baked the base which resulted in this week's baking lesson: a proper gameplan is kind of necessary or whatever >_>

In my first attempt, I used Preppy Kitchen's strawberry cheesecake recipe and added ¼ cup of freshly squeezed lemon juice to the filling. I followed the measurements precisely as John directed and I ended up with wayyyy too much cheesecake filling. This time I'll be following the measurements provided by Sally's Baking Addiction for this cheesecake so I don't have to resort to making cheesecake cupcakes like I did the first time. I can't spoil my papรก too much ๐Ÿ˜ค

Peek-a-boo! Everything was fine until I took the cheesecake out of the fridge and saw how the strawberries floated a little during the cooling process and they ended up not being fully immersed in it once it was set. Maybe this is what is supposed to happen and had I chosen a taller pan it wouldn't have been an issue at all?

This was so much fun to make!๐ŸŒธ I'm bummed out that the strawberries on the top weren't fully in the jelly so the cheesecake didn't turn out as beautiful as I wanted but at the same time it's not like I had a cohesive plan to begin with.
